Day out at The Zoo

I’m not one to believe in conspiracy theories, but it has been eerily warm this winter. The weather has felt so good that I decided to round up my nieces and nephew and take them for a day out at the Kansas City Zoo.

I’m a “Super Aunt” that’s why everyone always sees me with my nieces and nephew. I can’t help it, I feel some sort of responsibility to provide for and take them everywhere since my brother is in prison and can’t do so. I have no problem doing it either because I love them so much, and I want them to have a pretty normal childhood. The zoo was always one of my favorite places to go growing up, so I also want them to experience it as much as they can.

We have the “Friends Of The Zoo” membership and to be honest I didn’t think we’d be able to use it this winter, but the weather Gods had other plans.

My nieces and nephew are a funny bunch. Michelle is the oldest, she’s in the sixth grade now and slowly migrating to the “I’m too cool for you” phase that preteens go through. Ziggy and Dre are in the fourth grade and eager to learn everything (you know 3rd and 4th grades are the best years), and the baby is two and wants to do everything her big brother and sisters do, so we had an interesting day.

We started the day by visiting the river otters and the Polar bears. Then working our way through Africa. As soon as we passed the elephants the baby passed out and slept in her stroller the rest of the day, and woke up briefly when we passed the gorillas.

The day was beautiful, we had a great time, and it was by the grace of God I was able to handle all four kids by myself, lol.

Some quick tips that save me a lot of money during our outings is always packing lunches for everyone. I packed fresh fruit, water, juice, sandwiches, and chips. Signing up for the Friends of Zoo Membership. The membership pays for itself in two visits, plus it gives you various coupons and discounts throughout the zoo for the entire season.

Time is Not Guaranteed

Time is not guaranteed, it’s not something that we have a lot of. We always take time for granted, then we look back and think about what we could have had, should have had, what we missed out on, who we hurt, who hurt us, and realize…we wasted time.

But the time that we think we wasted was full of living in this confusing world trying to figure out this complicated thing called life.

Silk Smoothie Bowl Recipe

Lately I’ve become a “Smoothie Bowl” junkie. I’ve been sharing beautiful photos of my creations on Instagram, but never showed how I make them. I’d also been getting tons of requests from my friends to share my smoothie bowl recipe. I kept telling them that I’d send them the information but decided “what the heck” I’ll just share it on the blog.

The secret to my smoothie bowls smoothness is mixing a little yogurt and little almond milk to get the perfect texture. In my recipe I use Silk Dairy-Free yogurt because it has a creamy texture (that I need for my smoothies), it provides 6 grams of plant-powered protein per serving, it’s free of dairy, free of cholesterol, free of artificial colors, lactose-free, and it’s just delicious.

Because I’ve watched way to many documentaries about “milk,” I don’t drink a lot of it at all. Plus one of my nieces is lactose-intolerant. Instead we substitute recipes that call for milk with  Silk Unsweetened Vanilla Almond milk because it’s lactose-free, has 50% more calcium than dairy milk, no cholesterol, and we use the unsweetened version because it has less calories.

Since we were leaving my boyfriends parents house we swung by Walmart to grocery shop for a few items (they stay really close to Walmart), so I decided to pick up some Silk dairy-free yogurt, and Silk Almond Milk while we were there.

Smoothie Bowl Recipe

Ingredients:

Silk Unsweetened Vanilla Almond Milk (a few tbsp)

Frozen or Fresh Fruit

½ TBSP Ground Flaxseed (you can also add protein powder, super green powder, etc.)

1 or 2 TBSP Silk Dairy-Free Vanilla Yogurt (add more to thicken the smoothie bowl)

Sliced Fresh Fruit (whatever fruit you like)

Granola, Chia Seeds, or Flaxseed for garnishments on top

Directions:

  1. Pour Silk Almond Milk into a blender.
  1. Pour in frozen or fresh fruit, ground flaxseed, and yogurt.
  1. Blend until consistency is what you like (in the video I made it a little too smooth).
  1. Pour mixture into a bowl, and layer it with fresh fruit.
  1. Top with granola, chia seeds, or flaxseed.

Happy New Year

Staying true to my usual self I’m finally getting around to saying Happy New Year!!! You know I don’t like bombarding you with all of the “New Year, New Me” stuff.

So far this year has been alright. I have some new changes…one is the name of the blog. I decided to retire the name “Ericka Saves” and start fresh with the name “Life of Random, ” which is more me because ya’ll know I’m hella random  ;-). To be honest I had to sit back and really think about what I wanted from my blog, and what I wanted to do with my life. While doing that I wrote out what I wanted, things I wanted to experience, places I want to go, things I want to do in life in general. From that I gathered that I wasn’t living my life according to how I really want to live it.

I read once that, “Life is not a rehearsal.” It’s so true, so this year is a fresh start, and new beginnings. View Post
